Decadent cupcakes inspired by the iconic Ferrero Rocher, featuring rich chocolate cake, a creamy Nutella center, and luscious buttercream frosting.


Ingredients

  • 100 g all-purpose flour
  • 40 g cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 110 g flavorless oil (grapeseed or canola)
  • 50 g granulated sugar
  • 50 g brown sugar
  • 1 large egg
  • 170 g milk (dairy or non-dairy)
  • 50 g Nutella hazelnut spread
  • 215 g unsalted butter (room temperature)
  • 90 g powdered sugar
  • 30 g dark chocolate (melted)
  • 8 Ferrero Rocher chocolates
  • Hazelnuts (roughly crushed) for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a small bowl, combine the flour, cocoa powder, baking powder, and salt. Whisk together until well blended.
  3. In a large bowl, whisk together oil, granulated sugar, brown sugar, and egg until smooth and creamy.
  4. Alternately add the dry mixture and milk to the wet ingredients, whisking until just combined. Avoid over-mixing!
  5. Fill the cupcake liners about 3/4 full with batter. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow cupcakes to cool in the pan for about 15 minutes, then transfer them to a wire rack to cool completely.
  7. Cut a small hole in the center of each cupcake and fill it with Nutella.
  8. In a bowl, beat butter until creamy, then gradually add powdered sugar and melted dark chocolate, beating until fluffy.
  9. Pipe the frosting onto each cupcake, place a Ferrero Rocher on top, and sprinkle with crushed hazelnuts.
  10. Serve and enjoy!
