Description

A delightful fusion of creamy vanilla custard and rich eggnog, perfect for festive gatherings.


Ingredients

  • 250 g Whipping Cream or Heavy Cream
  • 200 g Eggnog
  • 3 Large Egg Yolks
  • 60 g Granulated Sugar
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Ground Nutmeg
  • ¼ Teaspoon Salt
  • 40 g Granulated Sugar (for topping)

Instructions

  1. Preheat the Oven: Set your oven to 325°F (160°C). Place 4 ramekins onto a baking tray that is at least 1 inch deep. Set aside and boil a kettle of water for later.
  2. Heat the Cream and Eggnog: In a small saucepan, combine the whipping cream and eggnog over low-medium heat. Stir gently until it reaches a simmer.
  3. Whisk the Yolks and Sugar: In a medium mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, nutmeg, and salt until smooth.
  4. Combine Carefully: Very slowly pour the hot cream mixture into the egg mixture while whisking constantly.
  5. Pour into Ramekins: Carefully pour the mixture into your ramekins until they are almost full.
  6. Prepare for Baking: Place the baking tray in the oven and fill it halfway with the hot water.
  7. Bake: Bake for 28-30 minutes, until the edges are set but the center is slightly jiggly.
  8. Cool Down: Remove the tray from the oven, pour out some of the water, and let the custards cool on a wire rack for about 30 minutes. Refrigerate for at least 4 hours or overnight.
  9. Bring to Room Temp: Let the ramekins sit at room temperature for about 30 minutes before serving.
  10. Caramelize the Sugar: Sprinkle sugar on top of each custard and caramelize using a kitchen blowtorch.

Notes

For a smoother consistency, strain the custard mix before pouring it into ramekins. Store leftovers in the fridge for up to 3 days.
