- 2 teaspoons honey or maple syrup
- 1 teaspoon Dijon or German mustard

- 1/2 teaspoon black pepper (to taste)
Instructions
- Preheat your oven to 220 degrees C (430 degrees F).
- Quarter the cabbage and remove the tough white core, then finely chop the leaves into bite-sized pieces.
- In a large mixing bowl, combine the chopped cabbage, olive oil, balsamic vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper.
- Use your hands to massage the ingredients into the cabbage ensuring even coating.
- Spread the cabbage mixture on a baking sheet and roast for 10-12 minutes until tender but slightly crunchy with caramelized edges.
- Remove from the oven and serve immediately, garnished with toasted nuts or fresh herbs if desired.
