- 1 tbsp unsalted butter
- 1 tbsp all-purpose flour
- 1 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 1 tsp Dijon mustard
- Salt & pepper to taste
- 1/2 tsp chili powder
Instructions
- Melt the butter in a saucepan over low heat for about 1-2 minutes.
- Add in the flour, whisking until a thick paste forms and cooking for 1-2 minutes.
- Gradually add in the milk while whisking continuously until the mixture is smooth (3-5 minutes).
- Increase the heat slightly and bring to a gentle boil to thicken.
- Remove from heat and stir in shredded cheddar until melted, then mix in the Dijon mustard, salt, pepper, and chili powder.
- Serve warm with pretzels.
Notes
Use freshly grated cheese for the best melting results. Adjust seasoning according to taste.
