- 2 cups Medjool dates (pitted, 12 oz by weight)
- 1/2 cup creamy peanut butter
- 3/4 cup chocolate chips
- 1/4 cup roasted (salted) peanuts
- 1/4 tsp flaky sea salt (or to taste)
Instructions
- Prep the dates: Start by pitting and halving the Medjool dates. Spread them out in a single layer on a baking sheet lined with parchment paper. Cover with another sheet of parchment and gently press them flat using a glass or measuring cup.
- Warm the peanut butter: Place your peanut butter in a microwave-safe bowl and microwave it in 15-second increments until it’s easy to drizzle.
- Melt the chocolate: In another microwave-safe bowl, place the chocolate chips and heat them on medium power. Stir every 30 seconds until completely melted and smooth.
- Layer the ingredients: Drizzle the warmed peanut butter evenly over the pressed date layer. Then pour the melted chocolate over the top, spreading it with a spoon.
- Add toppings: Immediately sprinkle the roasted peanuts on top of the melted chocolate, followed by a sprinkle of flaky sea salt.
- Chill: Place the baking sheet in the refrigerator and chill for about 1 to 2 hours until the bark is firm.
- Enjoy: Once set, break or cut it into pieces and enjoy your creation!
Notes
Make sure your peanut butter is at room temperature for easy drizzling. For a nut-free alternative, you can use sunflower seed butter instead.
