Description
A comforting dish of delicate Dover Sole fillets infused with lemon, dill, and leeks, perfect for family gatherings or special celebrations.
Ingredients
Scale
- 8 ounces baby potatoes, sliced to 1/8 inch thick (about 2 cups)
- 2 medium leeks, thinly sliced into 1/4 inch thick rings (about 1 cup)
- 5 teaspoons olive oil, divided
- 1/8 teaspoon salt and pepper (adjust to taste)
- Zest from 1 lemon (about 1 teaspoon)
- 8–10 ounces Dover Sole
- 1 tablespoon lemon juice
- 2 tablespoons fresh dill, chopped
- 1/8 teaspoon kosher salt for finishing
Instructions
- Preheat your oven to 425°F (220°C).
- In a medium bowl, toss the sliced baby potatoes and leeks with 2 teaspoons of olive oil, salt, pepper, and the zest of half a lemon.
- Spread the potato-leek mixture on a parchment-lined baking sheet in a single layer. Bake for 20 minutes, tossing halfway through.
- While waiting, in that same bowl, add the Dover Sole fillets. Drizzle with the remaining 1 teaspoon of olive oil, sprinkle with salt, pepper, and the rest of the lemon zest. Gently toss to coat.
- In a small bowl, mix 2 tablespoons of fresh dill, 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and 1/8 teaspoon of kosher salt to create dill oil.
- Once the potatoes are fork-tender, lay the marinated fish over the top of the veggies in the oven. Return to bake for an additional 8-10 minutes until the fish is cooked through and just flakes with a fork.
- Divide the leeks and potatoes between two bowls, top each with the fish, and generously spoon the dill oil on top. Garnish with a few fresh dill sprigs.
