Ingredients

  • 2 cups Shredded cheddar cheese
  • 1 cup Chicken (or protein of your choice)
  • 1 Finely chopped red onion
  • 1 cup Finely chopped cooked veggies (zucchini, bell peppers, corn)
  • 1 cup Chopped raw vegetables (tomatoes, radishes, cilantro)
  • Dips (avocado, salsa, sour cream, or Greek yogurt)

Instructions

  1. Heat the griddle: Preheat a large griddle or non-stick pan over medium heat.
  2. Assemble the quesadillas: Divide cheese and toppings among the tortillas, covering just one half.
  3. Fold and grill: Fold the tortilla and cook until golden brown and cheese is melted, about 5 minutes.
  4. Serve with fresh toppings: Once cooked, serve with desired raw toppings and dips.

Notes

Allow ingredients to come to room temperature for best results. Use a spatula to gently press down on the quesadilla for even cooking.
