- 1 cup coconut oil, melted
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 2 cups all-purpose flour (or 1:1 gluten-free flour blend)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup dairy-free chocolate chips
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the melted coconut oil, brown sugar, and granulated sugar until smooth.
- Stir in the vanilla extract until evenly blended.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the dairy-free chocolate chips.
- Drop tablespoon-sized amounts of dough onto the baking sheet, leaving space between each.
- Bake for 10-12 minutes until the edges are golden brown and the centers are soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra flavor, add a pinch of cinnamon. Allow dough to chill if it spreads too much during baking.
