Description

Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 1 pound potatoes, diced (Yukon gold or red)
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 2 teaspoons Italian herbs
  • Salt and pepper to taste
  • Optional olive oil for greasing

Instructions

  1. Grease the crockpot lightly with olive oil or nonstick spray.
  2. Place the diced potatoes in the bottom of the crockpot, seasoning with salt and pepper.
  3. Pat the chicken breasts dry, season with salt, pepper, and Italian herbs, then place on top of the potatoes.
  4. In a bowl, mix chicken broth, chopped sun-dried tomatoes, and remaining herbs; adjust seasoning as needed.
  5. Pour the broth mixture over the chicken and potatoes.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken reaches 165°F and potatoes are tender.
  7. Serve warm, garnished with fresh parsley or basil.

Notes

For thickened sauce, remove chicken and reduce liquid on the stovetop for 5-10 minutes before returning chicken to pot. Store leftovers in airtight containers for up to 4 days in the fridge or 3 months in the freezer.
