- 4 pieces chicken breasts (boneless, skinless)
- 1 pound potatoes, diced (Yukon gold or red)
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups chicken broth
- 2 teaspoons Italian herbs
- Salt and pepper to taste
- Optional olive oil for greasing
Instructions
- Grease the crockpot lightly with olive oil or nonstick spray.
- Place the diced potatoes in the bottom of the crockpot, seasoning with salt and pepper.
- Pat the chicken breasts dry, season with salt, pepper, and Italian herbs, then place on top of the potatoes.
- In a bowl, mix chicken broth, chopped sun-dried tomatoes, and remaining herbs; adjust seasoning as needed.
- Pour the broth mixture over the chicken and potatoes.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken reaches 165°F and potatoes are tender.
- Serve warm, garnished with fresh parsley or basil.
Notes
For thickened sauce, remove chicken and reduce liquid on the stovetop for 5-10 minutes before returning chicken to pot. Store leftovers in airtight containers for up to 4 days in the fridge or 3 months in the freezer.
