Ingredients

  • 1/2 teaspoon Garam masala or Chana masala
  • 1/4 teaspoon black pepper
  • Optional: cinnamon powder and maple syrup

Instructions

  1. Prep the chickpeas by draining (if canned) or cooking until tender (if soaked).
  2. Dry the chickpeas thoroughly by letting them air dry for 30 minutes or patting them dry with a towel.
  3. In a large bowl, combine the dried chickpeas with salt, oil, Garam masala, and black pepper. Toss until coated.
  4. Spread the chickpeas in a single layer on a parchment-lined baking sheet.
  5. Preheat the oven to 325°F (165°C) and bake for 35-50 minutes, shaking the pan halfway through.
  6. If making a sweet version, mix in cinnamon powder and maple syrup.
  7. Serve warm or store in an airtight container for later.
