Instructions
- Prep the chickpeas by draining (if canned) or cooking until tender (if soaked).
- Dry the chickpeas thoroughly by letting them air dry for 30 minutes or patting them dry with a towel.
- In a large bowl, combine the dried chickpeas with salt, oil, Garam masala, and black pepper. Toss until coated.
- Spread the chickpeas in a single layer on a parchment-lined baking sheet.
- Preheat the oven to 325°F (165°C) and bake for 35-50 minutes, shaking the pan halfway through.
- If making a sweet version, mix in cinnamon powder and maple syrup.
- Serve warm or store in an airtight container for later.
