Crispy Smashed Potatoes with Ginger-Tahini Dressing

Description

A modern take on a classic comfort food, these crispy smashed potatoes are paired with a zingy Ginger-Tahini dressing for a delightful twist.


Ingredients

  • 3 pounds baby or mini golden/yellow potatoes
  • 4 tablespoons Diamond Crystal kosher salt (or 2 tablespoons sea salt)
  • 4 to 5 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 and 1/2 tablespoons toasted sesame oil
  • 1/4 cup tahini
  • 1 tablespoon tamari or soy sauce
  • 2 teaspoons maple syrup
  • 1 inch piece ginger, grated
  • 3 garlic cloves, crushed
  • 2 tablespoons ice water
  • 2 scallions, sliced thinly on a bias
  • 1 serrano pepper, sliced thinly on a bias
  • 1/4 cup fresh mint leaves or Thai basil leaves, torn
  • 1/2 cup cilantro leaves and tender stems, chopped
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. Preheat the oven to 450 degrees F (232 degrees C).
  2. In a large saucepan, parboil the potatoes with 4 tablespoons of kosher salt until fork-tender, about 12-15 minutes. Drain and cool.
  3. Smash each potato gently with the bottom of a glass or flat spatula, then transfer to lined baking sheets.
  4. Drizzle with olive oil, season with salt, and roast in the oven for around 30 minutes until crispy and golden brown.
  5. While the potatoes roast, prepare the Ginger-Tahini sauce by blending lime juice, sesame oil, tahini, tamari, maple syrup, grated ginger, and minced garlic until smooth. Adjust with ice water if needed.
  6. Once potatoes are done, transfer to a serving platter, drizzle with Ginger-Tahini sauce, and top with scallions, serrano pepper, mint, cilantro, and peanuts.
  7. Serve remaining sauce on the side.

Notes

Ensure potatoes are dried well before roasting for better crisping. Leftovers can be stored in an airtight container for up to 3 days.
