Description
Flavor-packed tacos filled with chipotle-infused shredded tofu and fresh vegetables, baked to crispy perfection.
Ingredients

- 1/2 red onion, finely chopped
- 1 tablespoon olive oil or avocado oil
- 1 large bell pepper or 2 smaller, finely sliced
- 3 cloves garlic, minced
- 1 (14 oz) block extra firm tofu, shredded
- 1 teaspoon salt
- 2 chipotle peppers in adobo sauce + 1 teaspoon sauce
- 1 tablespoon tomato paste, salsa, or tomato sauce
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 teaspoon black pepper
- 1/2 cup finely chopped cilantro
- Juice from 1 lime
- 8 to 10 flour taco shells
- 1/2 to 1 cup shredded cheese of choice (optional topping)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large skillet, heat 1 tablespoon of olive or avocado oil over medium heat. Add the chopped red onion and sliced bell pepper, sautéing for about 5 minutes until softened.
- Add the minced garlic and cook for another 3 minutes until fragrant.
- Add all remaining filling ingredients (tofu, salt, chipotle peppers, sauce, tomato paste, cumin, chili powder, black pepper, cilantro, and lime juice) into the skillet and cook for an additional 5 minutes.
- Warm the taco shells in the microwave or oven for about 2 minutes to make them pliable.
- Line a sheet pan with parchment paper and fill each taco shell with 2 to 4 tablespoons of the tofu filling. Top with shredded cheese if desired.
- Bake in the preheated oven for 20 to 30 minutes, flipping once halfway through, until the taco shells are golden-brown and crispy.
- Once baked, let cool for a few minutes and top with desired toppings before serving.
Notes
For best flavor, use organic tofu and fresh veggies. Customize by using corn tortillas for a gluten-free option.
