Flavor-packed tacos filled with chipotle-infused shredded tofu and fresh vegetables, baked to crispy perfection.


Ingredients

  • 1/2 red onion, finely chopped
  • 1 tablespoon olive oil or avocado oil
  • 1 large bell pepper or 2 smaller, finely sliced
  • 3 cloves garlic, minced
  • 1 (14 oz) block extra firm tofu, shredded
  • 1 teaspoon salt
  • 2 chipotle peppers in adobo sauce + 1 teaspoon sauce
  • 1 tablespoon tomato paste, salsa, or tomato sauce
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 1/2 cup finely chopped cilantro
  • Juice from 1 lime
  • 8 to 10 flour taco shells
  • 1/2 to 1 cup shredded cheese of choice (optional topping)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, heat 1 tablespoon of olive or avocado oil over medium heat. Add the chopped red onion and sliced bell pepper, sautéing for about 5 minutes until softened.
  3. Add the minced garlic and cook for another 3 minutes until fragrant.
  4. Add all remaining filling ingredients (tofu, salt, chipotle peppers, sauce, tomato paste, cumin, chili powder, black pepper, cilantro, and lime juice) into the skillet and cook for an additional 5 minutes.
  5. Warm the taco shells in the microwave or oven for about 2 minutes to make them pliable.
  6. Line a sheet pan with parchment paper and fill each taco shell with 2 to 4 tablespoons of the tofu filling. Top with shredded cheese if desired.
  7. Bake in the preheated oven for 20 to 30 minutes, flipping once halfway through, until the taco shells are golden-brown and crispy.
  8. Once baked, let cool for a few minutes and top with desired toppings before serving.

Notes

For best flavor, use organic tofu and fresh veggies. Customize by using corn tortillas for a gluten-free option.
