Ingredients

  • 10 to 20 ounces firm or super firm tofu
  • 2 tablespoons canola or vegetable oil
  • 2 tablespoons coconut oil
  • Kosher salt (to taste)
  • 1 cup (120g) thinly sliced shallots
  • 1 1/2 tablespoons minced ginger
  • 1 cup full-fat canned coconut milk
  • 2 to 3 tablespoons sambal oelek
  • 1 1/2 tablespoons red curry paste
  • 1 1/2 to 3 teaspoons coconut or brown sugar
  • 1 teaspoon ground coriander (optional)
  • 1/2 teaspoon kosher salt (optional)

Instructions

  1. Drain and press the tofu for 15-30 minutes to remove excess moisture.
  2. Cut the tofu into 1-inch cubes.
  3. Heat 2 tablespoons of oil in a large skillet over medium-high heat.
  4. Add the tofu cubes and fry for 5-7 minutes on each side until golden and crispy.
  5. Remove the tofu and sprinkle with kosher salt.
  6. In the same skillet, add coconut oil, shallots, and ginger, and sauté for 3-4 minutes.
  7. Pour in coconut milk, sambal oelek, red curry paste, and sugar; stir well.
  8. Simmer the sauce for about 5 minutes until slightly thickened.
  9. Gently stir in the fried tofu and let simmer for 3-5 minutes.
  10. Taste and adjust seasoning if needed.

Notes

This dish stores beautifully in the fridge for up to 4 days. For best results, store tofu and sauce separately if freezing.
