Ingredients

  • 1 pound sweet potatoes, peeled and diced
  • 1/2 cup sunflower seeds, soaked in boiling water
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, chopped
  • 2 chipotle peppers in adobo, chopped
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 3 tablespoons nutritional yeast
  • 1 to 1 1/2 tablespoons fresh lime juice
  • 1 cup creamy plant-based milk (almond or oat milk)
  • 1/2 to 3/4 cup water
  • 12 to 14 ounces pasta of choice (whole grain or chickpea pasta)
  • 34 vegan sausage links, optional

Instructions

  1. Preheat the oven to 425°F (218°C). Spread the diced sweet potatoes on a baking sheet, sprinkle with salt, and bake for 45-60 minutes until fork-tender and slightly caramelized.
  2. Soak the sunflower seeds in boiling water for 30 minutes, then drain.
  3. Cook the pasta according to package instructions, reserving 1 cup of pasta water before draining.
  4. In a large pan, heat olive oil over medium heat. Sauté onions for 5-7 minutes until golden brown, then add garlic and cook for an additional 1-2 minutes until fragrant.
  5. Blend the baked sweet potatoes, onion-garlic mixture, soaked sunflower seeds, chipotle peppers, salt, black pepper, nutritional yeast, lime juice, and plant-based milk until smooth and creamy.
  6. Pour the sauce back into the pan over medium heat, add the cooked pasta, and mix well, adjusting the consistency with reserved pasta water as needed.
  7. If using vegan sausage, cook in the same pan until browned and crispy, then serve alongside or mixed into the pasta.

Notes

This pasta keeps well in the fridge for up to 3 days. Reheat gently with a splash of plant-based milk to restore creaminess. It can also be frozen for up to a month.
