Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 8 small tortillas
  • Cooking spray or oil
  • Salsa, guacamole, or sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, softened cream cheese, shredded cheese, garlic powder, onion powder, and cumin. Mix until well combined.
  3. Place a few tablespoons of the filling onto each tortilla and roll them tightly.
  4. Line a baking sheet with parchment paper and place the taquitos seam-side down. Lightly spray the tops with cooking spray or brush with oil.
  5. Bake for about 15-20 minutes, or until golden brown and crispy. For a crispier finish, broil for the last 2-3 minutes.
  6. Serve warm with salsa, guacamole, or sour cream on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze assembled, unbaked taquitos for up to 2 months.
