Instructions
- Sauté the aromatics: In a large pot, heat 2 tablespoons of olive oil (and 1 tablespoon of butter if using) over medium heat. Once hot, add 1 chopped onion and 3 minced garlic cloves. Sauté until fragrant, about 3-5 minutes.
- Add the rice: Stir in 1 cup of rice, allowing it to toast slightly for about 1-2 minutes.
- Pour in the broth: Carefully pour in 3 cups of chicken broth. The liquid should cover the rice by about 1 inch. Stir to combine.
- Season and layer: Season the mixture with salt and pepper to taste, and sprinkle in 1 teaspoon each of dried thyme and parsley. Place 4 chicken thighs or breasts on top, ensuring they’re above the liquid.
- Simmer: Cover the pot with a lid, reduce the heat to low, and let it simmer for 25-30 minutes.
- Finish up: If you’re adding vegetables like peas or mushrooms, stir them in during the last 5 minutes of cooking. Once done, remove from heat and let it rest for a few minutes.
- Serve: Fluff the rice with a fork, garnish with fresh herbs, and serve warm with lemon wedges on the side.
