Ingredients

  • 1 and 1/4 cups all-purpose flour
  • 3/4 cup blended cottage cheese
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 egg (beaten for egg wash)
  • 2 tablespoons coconut sugar (or brown sugar)
  • 1 teaspoon pumpkin pie spice (for topping)

Instructions

  1. In a bowl, whisk together blended cottage cheese, maple syrup, and pumpkin puree until smooth and creamy.
  2. In a separate bowl, combine flour, salt, pumpkin spice, and baking powder. Whisk thoroughly.
  3. Gradually pour the dry ingredients into the cottage cheese mixture and mix until just combined.
  4. Turn the dough onto a lightly floured surface and knead gently for about 2-3 minutes.
  5. Divide the dough into 4 equal pieces, roll each into a rope, and join the ends to form bagels.
  6. Place the bagels on a parchment-lined baking sheet, brush with beaten egg and sprinkle with coconut sugar and pumpkin spice.
  7. Preheat oven to 375°F (190°C) and bake for 25-30 minutes or until golden.
  8. Let them cool for 15 minutes before slicing.
