These Cottage Cheese Cinnamon Rolls are a healthier twist on a classic treat, made soft and moist with the addition of cottage cheese.

- 1 3/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons salt
- 1 1/4 cups plus 1 tablespoon full-fat cottage cheese
- 1/3 cup coconut sugar
- 1 1/2 tablespoons melted butter or coconut oil
- 1 tablespoon cinnamon
- 1/3 cup cream cheese
- 1 to 2 tablespoons monk fruit or powdered sugar
- 1 tablespoon milk of choice
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, add the cottage cheese and blend until smooth.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- Fold in the blended cottage cheese and gently knead until fully combined.
- Sprinkle flour onto a clean surface and roll the dough into a rectangle about 1/2 inch thick.
- In a small bowl, mix together the filling ingredients.
- Spread the filling evenly across the dough rectangle.
- Starting from one of the shorter sides, roll the dough into a tight cylinder.
- Cut the cylinder into 6 to 7 rolls.
- Place rolls in a baking dish and bake for 30-40 minutes until golden brown.
- For the icing, blend monk fruit or powdered sugar with milk until smooth.
- Allow rolls to cool slightly before drizzling icing over the top.
