- 16 oz cottage cheese
- 2 tablespoons almond butter or nut butter of choice
- 1/4–1/3 cup honey
- 3/4 cup crushed creme sandwich cookies
- 1 teaspoon vanilla extract
Instructions
- In a food processor or blender, combine cottage cheese, honey, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
- Transfer the mixture to a large bowl or a loaf pan.
- Gently fold in crushed cookies, reserving some for topping.
- Cover and freeze for 2.5 to 3.5 hours, or until firm.
- Once set, scoop into bowls and serve. Let sit for 15-30 minutes to soften if too icy.
Notes
For a creamier base, use a high-speed blender. Store leftovers in an airtight container in the freezer.
