Ingredients

  • 16 oz cottage cheese
  • 2 tablespoons almond butter or nut butter of choice
  • 1/41/3 cup honey
  • 3/4 cup crushed creme sandwich cookies
  • 1 teaspoon vanilla extract

Instructions

  1. In a food processor or blender, combine cottage cheese, honey, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
  2. Transfer the mixture to a large bowl or a loaf pan.
  3. Gently fold in crushed cookies, reserving some for topping.
  4. Cover and freeze for 2.5 to 3.5 hours, or until firm.
  5. Once set, scoop into bowls and serve. Let sit for 15-30 minutes to soften if too icy.
