  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the coconut flour, rolled oats, brown sugar (or coconut sugar), baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter (or coconut oil), eggs, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients, stirring until the dough comes together.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and flatten them slightly.
  6. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  7. Allow cookies to cool on the baking sheet for 3-5 minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, swap butter for coconut oil. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
