- 4 cups chicken broth
- 2 cups noodles (e.g., egg noodles or rice noodles)
- 1 onion (chopped)
- 4 cloves garlic (minced)
- 2 inches fresh ginger (sliced)
- 2 carrots (sliced)
- 2 stalks celery (sliced)
- Salt and pepper to taste
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Green onions (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and sliced ginger. Sauté until fragrant and the onion turns translucent, about 3-4 minutes.
- Add the sliced chicken breast and cook until browned on all sides, about 5-6 minutes.
- Pour in the chicken broth, and stir in soy sauce. Add salt and pepper to taste.
- Add the sliced carrots and celery and bring the mixture to a boil.
- Stir in your choice of noodles and cook until tender, about 5-7 minutes or until they are just al dente.
- Taste and adjust seasoning if needed.
- Ladle the soup into bowls, garnished with sliced green onions.
