  • 2 carrots (sliced)
  • 2 stalks celery (sliced)
  • Salt and pepper to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Green onions (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and sliced ginger. Sauté until fragrant and the onion turns translucent, about 3-4 minutes.
  3. Add the sliced chicken breast and cook until browned on all sides, about 5-6 minutes.
  4. Pour in the chicken broth, and stir in soy sauce. Add salt and pepper to taste.
  5. Add the sliced carrots and celery and bring the mixture to a boil.
