  • 1 clam shell cherry tomatoes, halved
  • 1/2 cup cooked quinoa

Instructions

  1. Prepare the Citrus Sauce: In a medium bowl, mix together the orange juice, lemon juice, minced garlic, honey, and red pepper flakes. Set aside.
  2. Season the Shrimp: Toss the shrimp with salt, pepper, and paprika until evenly coated.
  3. Blister the Tomatoes: Heat the butter and olive oil in a skillet over medium heat. Add the cherry tomatoes and sauté until blistered, about 3-4 minutes.
  4. Cook the Shrimp: Add the seasoned shrimp to the skillet, cooking for about 90 seconds on each side until pink.
  5. Combine and Finish: Pour the citrus sauce over the shrimp and tomatoes, tossing gently to combine and heat through for another 2-3 minutes.
  6. Serve It Up: Top fluffy quinoa with the shrimp and blistered tomatoes, garnishing with fresh basil.

Notes

Consider marinating the shrimp for extra flavor. Use the dish fresh as shrimp does not freeze well.
