Ingredients

  • 3 cups (720 ml) dairy-free milk
  • 1/2 cup (60 g) cornstarch
  • 2 1/2 oz (70 g) sugar of choice
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 2 1/2 oz (70 g) dairy-free chocolate

Instructions

  1. Line an 8-inch (20 cm) loaf pan with parchment paper and set aside.
  2. In a saucepan, add the dairy-free milk and whisk in cornstarch, cocoa powder, and your chosen sweetener. Stir thoroughly until there are no lumps.
  3. Place the saucepan over medium heat while whisking occasionally until the mixture thickens.
  4. Break or chop the dairy-free chocolate into small pieces.
  5. Once the mixture is creamy, add the chocolate and whisk continuously, reducing heat if too thick.
  6. Remove from heat and pour the chocolate mixture into the lined loaf pan, smoothing the top.
  7. Refrigerate for 3-4 hours or overnight for better texture.
  8. Invert the loaf onto a cutting board, dust with cocoa powder, slice, and enjoy.

Notes

For an extra touch, drizzle with chocolate ganache or serve with fresh berries.
