- 1 cup butter, softened
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup hazelnuts, chopped
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Spread the chopped hazelnuts on a baking sheet and toast them in the oven for 8 to 10 minutes. Allow them to cool, then chop them coarsely.
- In a large mixing bowl, cream the softened butter and sugar together for 2 to 3 minutes until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the toasted hazelnuts and chocolate chips.
- Use a tablespoon or cookie scoop to drop rounded balls of dough onto the prepared baking sheet, leaving space between each.
- Bake for 10 to 12 minutes, until the edges are set but the centers are still slightly soft.
- Let the cookies cool on the baking sheet for 3 to 4 minutes before transferring to a wire rack to cool completely.
Notes
For crisper cookies, try increasing sugar to 1 1/4 cups or bake a minute longer. Store in an airtight container for up to 5 days.
