Delicious chocolate sandwich cookies filled with rich fudge, perfect for any occasion.
Ingredients

- 3/4 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1/2 cup whipping cream
- 4 oz semisweet chocolate, chopped (or 1/2 cup plus 2 tbsp chocolate chips)
Instructions
- Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
- Incorporate the egg and vanilla extract until fully combined.
- Mix the flour, cocoa powder, and salt in a separate bowl.
- Combine the dry ingredients with the butter mixture until just combined.
- Chill the dough in the refrigerator for 1 hour.
- Make the filling by heating the whipping cream and pouring it over the chocolate, whisking until smooth.
- Preheat your oven to 350ºF (175°C) and roll out the chilled dough.
- Cut out cookies and place them on baking sheets.
- Bake for 9 to 11 minutes and cool on wire racks.
- Assemble the cookies by spreading fudge filling onto half and topping with the remaining cookies.
Notes
Store cookies in an airtight container at room temperature for 4 days.
