Description

Delicious chocolate sandwich cookies filled with rich fudge, perfect for any occasion.


Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 cup whipping cream
  • 4 oz semisweet chocolate, chopped (or 1/2 cup plus 2 tbsp chocolate chips)

Instructions

  1. Cream the butter and sugar together until light and fluffy, about 3-5 minutes.
  2. Incorporate the egg and vanilla extract until fully combined.
  3. Mix the flour, cocoa powder, and salt in a separate bowl.
  4. Combine the dry ingredients with the butter mixture until just combined.
  5. Chill the dough in the refrigerator for 1 hour.
  6. Make the filling by heating the whipping cream and pouring it over the chocolate, whisking until smooth.
  7. Preheat your oven to 350ºF (175°C) and roll out the chilled dough.
  8. Cut out cookies and place them on baking sheets.
  9. Bake for 9 to 11 minutes and cool on wire racks.
  10. Assemble the cookies by spreading fudge filling onto half and topping with the remaining cookies.
