- 1/3 cup maple syrup or honey
- 2 tablespoons arrowroot starch or cornstarch
- 1 teaspoon vanilla extract
- 1/4 cup cacao powder
- 2 large eggs

Instructions
- Preheat your oven to 350°F (175°C).
- In a blender, combine the cottage cheese, maple syrup or honey, arrowroot starch, vanilla extract, cacao powder, and eggs. Blend until smooth.
- Line a 6-inch springform pan with parchment paper and lightly grease the sides.
- Pour the cheesecake batter into the prepared pan and cover with aluminum foil.
- Bake for 50 minutes to 1 hour, removing the foil after 20 minutes. The cheesecake is done when the edges are lightly browned and the center is set.
- Cool in the pan for 20 minutes, then refrigerate for at least 2 hours before serving.
- Top with berries if desired, slice, and enjoy!
