  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the cottage cheese, maple syrup or honey, arrowroot starch, vanilla extract, cacao powder, and eggs. Blend until smooth.
  3. Line a 6-inch springform pan with parchment paper and lightly grease the sides.
  4. Pour the cheesecake batter into the prepared pan and cover with aluminum foil.
  5. Bake for 50 minutes to 1 hour, removing the foil after 20 minutes. The cheesecake is done when the edges are lightly browned and the center is set.
