Delicious no-bake bliss balls made with medjool dates, walnuts, cocoa powder, and shredded coconut. A perfect treat for any occasion, rich in flavor and easy to customize.


Ingredients

  • 1 cup medjool dates, pitted
  • 1 cup walnuts or almonds
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup shredded coconut, plus more for rolling
  • 1 tbsp vanilla extract
  • 1/4 cup chocolate chips (optional, for drizzling)

Instructions

  1. In a food processor, combine the pitted dates and walnuts (or almonds). Pulse until the mixture resembles a coarse meal and sticks together when pressed (about 1-2 minutes).
  2. Add the cocoa powder, shredded coconut, and vanilla extract to the processor. Blend until well combined (1-2 minutes).
  3. With slightly damp hands, grab spoonfuls of the mixture and roll them into small balls (about 1 inch in diameter). If desired, roll each ball in additional shredded coconut.
  4. If desired, melt the chocolate chips and drizzle them across the bliss balls.
  5. Place the bliss balls in the fridge for about 30 minutes to firm up before serving.

Notes

Store in an airtight container for up to a week in the fridge or freeze for up to three months. For a nut-free version, use sunflower seeds or oats in place of nuts.
