Delicious no-bake bliss balls made with medjool dates, walnuts, cocoa powder, and shredded coconut. A perfect treat for any occasion, rich in flavor and easy to customize.

- 1 cup medjool dates, pitted
- 1 cup walnuts or almonds
- 1/2 cup unsweetened cocoa powder
- 1/4 cup shredded coconut, plus more for rolling
- 1 tbsp vanilla extract
- 1/4 cup chocolate chips (optional, for drizzling)
Instructions
- In a food processor, combine the pitted dates and walnuts (or almonds). Pulse until the mixture resembles a coarse meal and sticks together when pressed (about 1-2 minutes).
- Add the cocoa powder, shredded coconut, and vanilla extract to the processor. Blend until well combined (1-2 minutes).
- With slightly damp hands, grab spoonfuls of the mixture and roll them into small balls (about 1 inch in diameter). If desired, roll each ball in additional shredded coconut.
- If desired, melt the chocolate chips and drizzle them across the bliss balls.
- Place the bliss balls in the fridge for about 30 minutes to firm up before serving.
Notes
Store in an airtight container for up to a week in the fridge or freeze for up to three months. For a nut-free version, use sunflower seeds or oats in place of nuts.
