  • 2 cloves minced garlic
  • 2 ripe peaches, diced
  • 1/4 cup finely chopped cilantro
  • 1/2 to 1 jalapeño, seeded and minced
  • 1 teaspoon salt
  • Pinch black pepper
  • 2 cloves minced garlic
  • 1/2 cup finely chopped sweet or red bell pepper
  • 1/2 cup Greek yogurt
  • 1/4 cup finely chopped cilantro
  • Juice from 1/2 lime
  • 2 cloves minced garlic
  • 1/2 teaspoon salt
  • Pinch black pepper
  • 6 taco shells
  • 1 tablespoon butter or oil for cooking
  • Additional fresh chopped cilantro for garnish

Instructions

  1. Marinate the shrimp with lime juice, salt, cumin, chili powder, black pepper, chipotle pepper, and minced garlic for at least 15 minutes.
  2. Prepare the peach salsa by mixing diced peaches, cilantro, jalapeño, salt, black pepper, and garlic in a bowl.
  3. Make the yogurt sauce by whisking Greek yogurt, cilantro, lime juice, garlic, salt, and black pepper until smooth.
  4. Cook the marinated shrimp in butter or oil over medium heat for about 1.5 to 2 minutes on each side until pink and opaque.
  5. Warm the taco shells in the microwave or a dry skillet until soft and pliable.
  6. Assemble the tacos by spreading yogurt sauce on each shell, adding shrimp, and topping with peach salsa.

Notes

Adjust the spice levels to your taste and consider using other seasonal fruits in the salsa.
