- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne or ground chipotle
- 1 1/4 teaspoons salt
- 1 1/4 lb skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 2 shallots, sliced into thin rings
- 2 large peaches, cut into 1/2 inch thick wedges
- 2 tablespoons lime juice
- 1 tablespoon honey
- Cilantro and lime wedges for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix the chili powder, cumin, smoked paprika, cayenne, and salt.
- Season all sides of the chicken with the spice mix.
- Heat olive oil in a skillet and sear the chicken until golden, about 5-7 minutes per side.
- Set the chicken aside and cover to keep warm.
- Sauté shallots in the same skillet until tender.
- Add peaches and sauté for 2 minutes.
- Squeeze lime juice and drizzle honey over the peaches.
- Return the chicken to the skillet and cook until thoroughly done.
- Garnish with cilantro and serve with lime wedges.
Notes
Allow chicken to rest a few minutes after cooking to retain moisture. Leftovers can be stored in the fridge for up to 3 days.
