Ingredients

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne or ground chipotle
  • 1 1/4 teaspoons salt
  • 1 1/4 lb skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 shallots, sliced into thin rings
  • 2 large peaches, cut into 1/2 inch thick wedges
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Cilantro and lime wedges for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix the chili powder, cumin, smoked paprika, cayenne, and salt.
  3. Season all sides of the chicken with the spice mix.
  4. Heat olive oil in a skillet and sear the chicken until golden, about 5-7 minutes per side.
  5. Set the chicken aside and cover to keep warm.
  6. Sauté shallots in the same skillet until tender.
  7. Add peaches and sauté for 2 minutes.
  8. Squeeze lime juice and drizzle honey over the peaches.
  9. Return the chicken to the skillet and cook until thoroughly done.
  10. Garnish with cilantro and serve with lime wedges.

Notes

Allow chicken to rest a few minutes after cooking to retain moisture. Leftovers can be stored in the fridge for up to 3 days.
