Flavor-packed chickpea wraps in three delicious variations: Buffalo Cajun, Berbere, and Lemon Pepper, perfect for a quick and satisfying meal.
Ingredients

- 1/2 cup chopped onion
- 1 cup cooked chickpeas
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 – 1.5 teaspoons Ethiopian Berbere spice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon lime juice
- 1/4 cup water
- 2 tortillas (6 to 7 inches)
- 2 tablespoons chopped red bell pepper
- Chopped cilantro & lime juice (as needed)
- 2 tablespoons vegan buffalo sauce (or 1.5 tablespoons hot sauce and 2 teaspoons melted vegan butter)
- 1.5 teaspoons Cajun seasoning
- 1/4 cup chopped celery and onion (as needed)
- Vegan ranch (as needed)
- 2 tablespoons lemon juice
- 1.5 tablespoons maple syrup
- 1/4 teaspoon lemon zest
- 2 teaspoons soy sauce
- 1/4 teaspoon black pepper
- Generous pinch of salt and sugar
- Optional pinch cayenne or chili flakes
- 1 teaspoon cornstarch (mixed with 1/4 cup of water)
- Chopped or thinly sliced cabbage (or celery or red bell pepper)
Instructions
- Make the Berbere Chickpea Wraps: Sauté onion in a skillet, add chickpeas and spices, then simmer with lime juice and water. Fill tortillas with mixture and serve.
- Make the Buffalo Cajun Chickpea Wraps: Sauté onions, add chickpeas and buffalo sauce with seasoning. Serve in tortillas with fresh veggies and vegan ranch.
- Make the Lemon Pepper Chickpeas: Sauté chickpeas, coat with lemon mixture, and thicken with cornstarch. Fill tortillas and enjoy!
