Description

Flavor-packed chickpea wraps in three delicious variations: Buffalo Cajun, Berbere, and Lemon Pepper, perfect for a quick and satisfying meal.


Ingredients

  • 1/2 cup chopped onion
  • 1 cup cooked chickpeas
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 11.5 teaspoons Ethiopian Berbere spice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon lime juice
  • 1/4 cup water
  • 2 tortillas (6 to 7 inches)
  • 2 tablespoons chopped red bell pepper
  • Chopped cilantro & lime juice (as needed)
  • 2 tablespoons vegan buffalo sauce (or 1.5 tablespoons hot sauce and 2 teaspoons melted vegan butter)
  • 1.5 teaspoons Cajun seasoning
  • 1/4 cup chopped celery and onion (as needed)
  • Vegan ranch (as needed)
  • 2 tablespoons lemon juice
  • 1.5 tablespoons maple syrup
  • 1/4 teaspoon lemon zest
  • 2 teaspoons soy sauce
  • 1/4 teaspoon black pepper
  • Generous pinch of salt and sugar
  • Optional pinch cayenne or chili flakes
  • 1 teaspoon cornstarch (mixed with 1/4 cup of water)
  • Chopped or thinly sliced cabbage (or celery or red bell pepper)

Instructions

  1. Make the Berbere Chickpea Wraps: Sauté onion in a skillet, add chickpeas and spices, then simmer with lime juice and water. Fill tortillas with mixture and serve.
  2. Make the Buffalo Cajun Chickpea Wraps: Sauté onions, add chickpeas and buffalo sauce with seasoning. Serve in tortillas with fresh veggies and vegan ranch.
  3. Make the Lemon Pepper Chickpeas: Sauté chickpeas, coat with lemon mixture, and thicken with cornstarch. Fill tortillas and enjoy!
