Ingredients

- 2 cans chickpeas, drained and rinsed
- 1 cup rolled oats
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup grated carrot
- 1/4 cup tomato paste
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup ketchup
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the chickpeas until mostly smooth with some chunky bits left.
- Stir in the rolled oats, chopped onion, minced garlic, grated carrot, tomato paste, soy sauce, maple syrup, smoked paprika, thyme, salt, and pepper. Mix until well incorporated.
- Transfer the mixture to a loaf pan and form it into a loaf shape. Top with ketchup, spreading it evenly.
- Bake for 45 minutes or until the edges are golden and the loaf feels firm.
- Let it cool for 5-10 minutes before slicing.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for 1-2 months.
