Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1 cup rolled oats
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup grated carrot
  • 1/4 cup tomato paste
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup ketchup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the chickpeas until mostly smooth with some chunky bits left.
  3. Stir in the rolled oats, chopped onion, minced garlic, grated carrot, tomato paste, soy sauce, maple syrup, smoked paprika, thyme, salt, and pepper. Mix until well incorporated.
  4. Transfer the mixture to a loaf pan and form it into a loaf shape. Top with ketchup, spreading it evenly.
  5. Bake for 45 minutes or until the edges are golden and the loaf feels firm.
  6. Let it cool for 5-10 minutes before slicing.

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for 1-2 months.
