A deliciously simple vegan tofu alternative made from chickpea flour, perfect for meal prep and customizable for various flavors.
Ingredients

- 1 cup chickpea flour (or 1 1/4 cup for a thicker texture)
- 1/2 to 3/4 tsp salt (adjust to taste)
- 1/4 tsp garlic powder
- 1/4 tsp turmeric (optional)
- 1/4 tsp cumin or garam masala (optional)
- 1 3/4 cup water (room temperature)
Instructions
- Prepare a 9 by 5-inch bread pan by greasing it or lining it with parchment paper.
- Whisk together all ingredients in a mixing bowl until smooth; a blender can be used for a lump-free batter.
- Pour the mixture into a deep saucepan and cook over medium heat, stirring continuously until it thickens into a stiff paste, about 4-5 minutes.
- Transfer the mixture to the prepared loaf pan, smoothing the top with a spatula. Let it cool, then refrigerate for at least 1 hour to set.
- Once set, remove the tofu from the pan and cut into desired shapes. Store in an airtight container in the fridge for up to four days.
Notes
For a deeper flavor, substitute water with homemade vegetable stock. Make ahead and store in water for longer freshness.
