Description

A deliciously simple vegan tofu alternative made from chickpea flour, perfect for meal prep and customizable for various flavors.


Ingredients

  • 1 cup chickpea flour (or 1 1/4 cup for a thicker texture)
  • 1/2 to 3/4 tsp salt (adjust to taste)
  • 1/4 tsp garlic powder
  • 1/4 tsp turmeric (optional)
  • 1/4 tsp cumin or garam masala (optional)
  • 1 3/4 cup water (room temperature)

Instructions

  1. Prepare a 9 by 5-inch bread pan by greasing it or lining it with parchment paper.
  2. Whisk together all ingredients in a mixing bowl until smooth; a blender can be used for a lump-free batter.
  3. Pour the mixture into a deep saucepan and cook over medium heat, stirring continuously until it thickens into a stiff paste, about 4-5 minutes.
  4. Transfer the mixture to the prepared loaf pan, smoothing the top with a spatula. Let it cool, then refrigerate for at least 1 hour to set.
  5. Once set, remove the tofu from the pan and cut into desired shapes. Store in an airtight container in the fridge for up to four days.

Notes

For a deeper flavor, substitute water with homemade vegetable stock. Make ahead and store in water for longer freshness.
