Ingredients

- 1 cup (200 g) dried chickpeas
- Water for soaking and blending (3/4-1 cup or 180-240 ml)
- 1 tsp sea salt
- 1 Tbsp Italian seasonings
- 1–2 Tbsp olive oil
Instructions
- Soak the chickpeas in cold water overnight, then drain thoroughly.
- Blend the soaked chickpeas with 3/4 cup of fresh water and the salt until smooth.
- Preheat the oven to 375°F (190°C) and line a baking sheet with oiled parchment paper.
- Spread the chickpea mixture evenly on the tray.
- Sprinkle with Italian seasoning.
- Bake for 20 minutes until edges are golden brown.
- Cut into desired shapes and loosen from parchment.
- Drizzle with oil, toss gently, and bake for an additional 5-10 minutes until golden and crispy.
- Cool on baking sheet before serving.
Notes
These crackers are vegan, gluten-free, and can be customized with different spices. Store in an airtight container for up to one week.
