- 1 onion, diced
- 1 tablespoon oil
- 6 garlic cloves, rough chopped
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 tablespoon chili powder
- 2 teaspoons kosher salt
- 1/4 teaspoon chipotle powder (optional)
- 1 cup water
- 1 tablespoon soy sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon dried oregano
- 1 can diced green chilies (optional)
- 3 lbs boneless, skinless chicken breast or thighs
Instructions
- Heat oil in a pot and sauté diced onion for 2 minutes.
- Add garlic and sauté for another 4-5 minutes.
- Stir in cumin, coriander, chili powder, and salt, toasting spices for 1-2 minutes.
- Add water, soy sauce, and apple cider vinegar, mixing well.
- Add chicken to the pot, cover, and simmer on medium-low heat for 45 minutes.
- Remove chicken, shred it, then return to pot and simmer for 5-10 minutes.
- For crispy carnitas, sear in oil or broil until crispy.
Notes
For best flavor, let the meat rest before shredding and refrigerate leftovers in an airtight container.
