  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter with brown and granulated sugars until smooth and fluffy.
  3. Add egg and vanilla extract to the butter mixture, beating until well combined.
  4. In a separate bowl, whisk together flour, oats, coconut, baking soda, and salt.
  5. Gradually add dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in chopped pecans.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between each cookie.
  8. Bake for 10 to 12 minutes until edges are golden and centers are slightly soft.
  9. Allow cookies to cool on the baking sheet for 3-5 minutes before transferring to a wire rack.
