Ingredients

  • 4 large Leeks (white and light green parts only), sliced thinly
  • 2 tablespoons Butter (unsalted)
  • 1 tablespoon Olive Oil (extra virgin)
  • 1 teaspoon Salt (sea salt)
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Black Pepper (freshly ground)
  • 1 1/2 cups Cheddar Cheese (grated, sharp preferred)
  • 1/4 cup Parmesan Cheese (grated)
  • 1 teaspoon Fresh Thyme (chopped, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, combine butter and olive oil over medium heat. Once melted, add the sliced leeks, salt, sugar, and black pepper.
  3. Sauté the leeks for about 25-30 minutes until they soften and turn golden.
  4. Lightly grease your baking dish or cast-iron skillet.
  5. Transfer the cooked leeks to the baking dish and top with grated cheddar and Parmesan.
  6. Bake uncovered for 10-12 minutes until the cheese is melted and bubbly.
  7. Broil for 2-3 minutes for a crispy topping, watching closely to prevent burning.
  8. Allow to cool slightly before serving warm.

Notes

Make ahead by prepping leeks a day in advance and storing them in the fridge. For optimal texture, reheat in the oven.
