A comforting twist on a classic Mexican dish featuring tender chicken wrapped in tortillas and smothered in a creamy white sauce.


Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 1 jalapeño, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 3 cups chicken broth
  • 2 cups sour cream
  • 2 tsp kosher salt (or to taste)
  • 3 chicken breasts, cooked and shredded
  • 1 tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 2 cups grated cheddar
  • 6 flour tortillas
  • Finely chopped green onion or cilantro (for serving)

Instructions

  1. Preheat your oven to 375ºF (190ºC).
  2. Heat 2 tbsp olive oil over medium heat. Add onion and jalapeño, sauté for about 5 minutes.
  3. Add minced garlic and sauté for an additional minute.
  4. Sprinkle in the flour, stirring for 1-2 minutes.
  5. Gradually whisk in chicken broth until smooth, bring to a simmer.
  6. Mix in sour cream and salt, stir until smooth.
  7. Season chicken breasts with salt and pepper, cook until fully cooked, then shred.
  8. Assemble by filling tortillas with chicken and sauce, roll and place in a baking dish.
  9. Pour remaining sauce over top and add extra cheese.
  10. Bake for 20-25 minutes until golden and bubbly.

Notes

Use fresh ingredients for the best flavor. Can store leftovers in an airtight container for up to 3 days.
