Description
A plant-based twist on traditional shawarma featuring roasted cauliflower, chickpeas, and creamy tahini sauce.
Ingredients

- 1 Tbsp. curry powder
- 2 tsp. paprika
- 1 tsp. ground cumin
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 3 Tbsp. extra-virgin olive oil
- 1 large head cauliflower, chopped into florets
- 1 (15-oz.) can chickpeas, rinsed, drained, and patted dry
- 2 cups cooked white basmati rice
- Optional Toppings:
- Thinly sliced English or Persian cucumber
- Halved cherry tomatoes
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh parsley leaves
- Green Tahini Sauce:
- 1/4 cup tahini
- 2 Tbsp. fresh lemon juice
- 1/2 tsp. minced fresh garlic
- 1/4 tsp. ground cumin
- 1/4 tsp. kosher salt
- 1/4 tsp. black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, combine the curry powder, paprika, cumin, salt, and black pepper.
- Spread the cauliflower florets on a baking sheet. Toss with 2 Tbsp. of olive oil. On another baking sheet, toss the chickpeas with remaining 1 Tbsp. of olive oil.
- Sprinkle 1 Tbsp. of the spice mixture over the chickpeas and toss to coat. Sprinkle the remaining spice mixture over the cauliflower and toss.
- Roast both sheets in the oven for 30 minutes, shaking the chickpeas halfway through.
- Remove the chickpeas when golden and crispy, and let the cauliflower roast for an additional 5-10 minutes.
- While veggies are roasting, blend all tahini sauce ingredients in a blender, gradually adding 1/3 cup warm water until smooth.
- Assemble by dividing cooked rice into bowls and topping with roasted cauliflower, chickpeas, cucumber, tomatoes, and tahini sauce.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. This dish is customizable for flavor and dietary needs.
