Crispy on the outside and soft on the inside, these Cauliflower Potato Patties are a delightful comfort food that can be customized to your tastes.
Ingredients

- 1/2 head of cauliflower, grated
- 1 large potato, boiled and mashed
- 1/4 cup chopped onion (optional)
- 3–4 tablespoons finely chopped cilantro
- 3/4 teaspoon salt, or to taste
- 1/8 teaspoon rock salt (kala namak)
- 1/2 teaspoon Kashmiri garam masala, or to taste
- 1 teaspoon whole coriander seeds
- 1/2 green chili, finely chopped, or chili flakes
- 1 medium tomato, pureed
- 2 cloves of garlic, minced
- 1/2 inch ginger, grated
- Coarsely ground oats or breadcrumbs, as needed for coating
- A few tablespoons organic canola oil, for baking or frying
Instructions
- In a pan heated over medium, lightly roast the grated cauliflower for about 6 minutes until tender and slightly caramelized.
- In a large mixing bowl, combine the roasted cauliflower with the boiled and mashed potato, chopped onion, cilantro, salt, spices, along with the pureed tomato, garlic, and ginger. Mix until well incorporated.
- If adding black-eyed peas, pulse them in a food processor to a smoother texture before mixing.
- Taste and adjust seasoning as necessary.
- Use coarsely ground oats or breadcrumbs to help shape your patties.
- On a plate, mix coarsely ground oats with salt, pepper, and garlic powder. Dip formed patties into the mix on both sides.
- Lay the patties on a parchment-lined baking sheet. Drizzle or spray lightly with oil for crispiness.
- Preheat your oven to 365°F (185°C) and bake for 25-40 minutes, flipping halfway through and spraying the other side with oil.
Notes
Store leftovers in an airtight container in the fridge for up to 5 days or freeze before baking for up to 3 months.
