- ½ cup unsalted butter, softened
- ¾ cup sugar
- 2 large eggs, at room temperature
- ½ cup plain yogurt or sour cream
- ¼ cup freshly squeezed orange juice
- 1 tbsp orange zest
- ¾ cup chopped pistachios, lightly toasted
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cardamom.
- In a large bowl, beat the softened butter with the sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the orange zest and juice.
- Gradually mix the dry ingredients and yogurt into the wet mixture, alternating between dry and wet until just combined.
- Fold in the pistachios, reserving a few for the top.
- Pour the batter into the prepared loaf pan and bake for 45–55 minutes.
- Cool in the pan for 10 minutes before transferring to a wire rack.
- Optional: Drizzle with orange glaze or dust with powdered sugar before serving.

For a gluten-free option, use a gluten-free flour blend. Make sure your butter is softened before mixing.
