  • 1 5.3 ounce (150g) tube of tomato paste
  • 2 tablespoons tamari or soy sauce
  • 2 tablespoons nutritional yeast
  • 4 to 5 large oil-packed sundried tomatoes, finely chopped
  • 10 ounces (285g) spaghetti or linguine
  • Toasted pine nuts (optional garnish)
  • Chopped flat-leaf Italian parsley (optional garnish)

Instructions

  1. Bring a large saucepan of salted water to a boil and cook the spaghetti or linguine according to package instructions until al dente, about 8-10 minutes.
  2. Before draining, reserve at least 1 cup of pasta water.
  3. In a large skillet, heat olive oil over medium-high heat and sauté onions with salt and pepper for about 5 minutes, adding water to deglaze if needed.
  4. Continue cooking the onions for an additional 15 minutes until golden brown, then add garlic and cook for another 5-10 minutes.
  5. Add red pepper flakes and oregano, cook for 30 seconds, then incorporate the tomato paste and cook for 2-3 minutes.
  6. Stir in tamari, nutritional yeast, and sundried tomatoes. Reduce heat and mix well.
  7. Add reserved pasta water gradually to achieve desired sauce consistency, then toss in the cooked pasta.
  8. Garnish with toasted pine nuts and parsley, serve immediately.

Notes

Patience is key in caramelizing onions for maximum flavor. Store leftovers in an airtight container for up to 3 days.
