- 2 large sweet onions, thinly sliced
- 2 tablespoons extra virgin olive oil
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onions and reduce the heat slightly. Cook for 15-20 minutes, stirring occasionally, until caramelized.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the cannellini beans, seasoning with salt and pepper to taste. Cook for an additional 5-7 minutes until heated through.
- Garnish with fresh herbs before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. This dish can be made a day in advance or frozen for up to 3 months.
