A hearty, one-pan meal featuring smoky andouille sausage, colorful bell peppers, and perfectly cooked rice, seasoned with Cajun spices.

- 1 tablespoon olive oil
- 12–16 oz smoked sausage (andouille or kielbasa), sliced
- 1 medium onion, chopped
- 2 pieces bell peppers (mixed colors), chopped
- 2–3 cloves garlic, minced
- 1 cup long-grain white rice (jasmine rice preferred)
- 1.5–2 tablespoons Cajun seasoning
- 2 cups hot chicken broth
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add sliced smoked sausage and cook until browned and slightly crisp, about 4-6 minutes.
- Transfer a couple pieces to taste-test for seasoning.
- Add chopped onion and bell peppers, sautéing until softened, about 4-5 minutes.
- Stir in minced garlic and cook until fragrant, about 30-60 seconds.
- Add the rice and Cajun seasoning, coating the rice with oil and spices. Lightly toast the rice for 1 minute.
- Pour in hot chicken broth, stir, and bring to a gentle simmer.
- Reduce heat to low, cover, and cook until rice is tender and liquid is absorbed, about 18-22 minutes.
- Remove from heat, fluff with a fork, and season with salt and pepper to taste. Let rest for 3-5 minutes before serving.
Notes
For optimal flavor, let the sausage cook until crispy. This dish can be stored in the fridge for up to 4 days and reheated in a skillet.
