Ingredients

  • 1216 oz smoked sausage (andouille or kielbasa), sliced
  • 1 medium onion, chopped
  • 2 pieces bell peppers (mixed colors), chopped
  • 23 cloves garlic, minced
  • 1 cup long-grain white rice (jasmine rice preferred)
  • 1.52 tablespoons Cajun seasoning
  • 2 cups hot chicken broth
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add sliced smoked sausage and cook until browned and slightly crisp, about 4-6 minutes.
  3. Transfer a couple pieces to taste-test for seasoning.
  4. Add chopped onion and bell peppers, sautéing until softened, about 4-5 minutes.
  5. Stir in minced garlic and cook until fragrant, about 30-60 seconds.
  6. Add the rice and Cajun seasoning, coating the rice with oil and spices. Lightly toast the rice for 1 minute.
  7. Pour in hot chicken broth, stir, and bring to a gentle simmer.
  8. Reduce heat to low, cover, and cook until rice is tender and liquid is absorbed, about 18-22 minutes.
  9. Remove from heat, fluff with a fork, and season with salt and pepper to taste. Let rest for 3-5 minutes before serving.

Notes

For optimal flavor, let the sausage cook until crispy. This dish can be stored in the fridge for up to 4 days and reheated in a skillet.
