A nourishing and flavorful Cabbage Detox Soup that combines fresh vegetables for a comforting and healthy dish.
Ingredients

- 1 tablespoon olive oil or avocado oil
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 large carrots, cut into rounds
- 2 celery stalks, diced
- 1 small head of green cabbage, chopped
- 1 can diced tomatoes with juices
- 8 cups vegetable broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat the olive oil in a large stockpot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the onions are translucent and the vegetables begin to soften.
- Add the minced garlic and stir constantly for about 60 seconds until fragrant.
- Add the chopped cabbage and stir to coat with the oil and vegetable mixture. Cook for another 5-7 minutes until the cabbage wilts down.
- Add the diced tomatoes, vegetable broth, dried oregano, thyme, bay leaf, and salt and pepper. Stir well and scrape the bottom of the pot.
- Bring to a boil, then reduce the heat to low, cover, and let simmer for 20-25 minutes.
- Taste and adjust seasoning. Remove and discard the bay leaf. Serve hot, garnished with fresh parsley.
Notes
Storage: Refrigerate leftovers in airtight containers for up to 4 days or freeze for up to 3 months. This soup tastes even better the next day!
