- 1 cup mashed roasted butternut squash (cooled)
- 2 large eggs
- 1/4 cup pure maple syrup
- 2 tbsp olive oil
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- 1/4 tsp salt
- Optional: 1/4 cup sugar plus 1/2 tsp cinnamon for topping
- Optional: Neutral oil spray for greasing
Instructions
- Preheat your oven to 350F (175C) and lightly spray your donut pan with neutral oil.
- In a large bowl, whisk together the mashed roasted butternut squash, eggs, maple syrup, olive oil, and vanilla extract until smooth.
- In another bowl, mix the flour, baking powder, cinnamon, nutmeg, cloves, and salt until combined.
- Fold the dry ingredients into the wet ingredients carefully until just mixed.
- Fill the donut pan cavities about 3/4 full with the batter.
- Bake for 14-16 minutes until a toothpick comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
- Optional: Dip warm donuts in a mixture of sugar and cinnamon.
- Serve warm, or store in an airtight container.
