Ingredients

  • 1 cup mashed roasted butternut squash (cooled)
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1/4 tsp salt
  • Optional: 1/4 cup sugar plus 1/2 tsp cinnamon for topping
  • Optional: Neutral oil spray for greasing

Instructions

  1. Preheat your oven to 350F (175C) and lightly spray your donut pan with neutral oil.
  2. In a large bowl, whisk together the mashed roasted butternut squash, eggs, maple syrup, olive oil, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking powder, cinnamon, nutmeg, cloves, and salt until combined.
  4. Fold the dry ingredients into the wet ingredients carefully until just mixed.
  5. Fill the donut pan cavities about 3/4 full with the batter.
  6. Bake for 14-16 minutes until a toothpick comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.
  8. Optional: Dip warm donuts in a mixture of sugar and cinnamon.
  9. Serve warm, or store in an airtight container.
