- 3 pounds boneless beef chuck roast, excess fat trimmed
- 1 1/2 teaspoons Kosher salt
- 1 teaspoon ground black pepper
- Olive oil (extra virgin recommended)
- 1 large red onion, chopped
- 6 cloves fresh garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 2 tablespoons tomato paste
- 2 tablespoons balsamic vinegar
- 1 tablespoon maple syrup
- 1 cup red wine or beef broth
- 4 cups beef broth
- 1/4 cup all-purpose flour
- 3 bay leaves
- 2 sprigs fresh rosemary (or 1 teaspoon dried)
- 4 cups diced butternut squash, cut into 1-inch cubes
- Chopped Italian parsley, for garnish
Instructions
- Cut the beef chuck into 1-inch cubes and pat them dry. Season with salt and pepper and drizzle with olive oil.
- Heat oil in a large Dutch oven over medium-high heat and sear the beef until browned, about 5-7 minutes per batch.
- Reduce heat to medium, add more oil, and sauté the onions for about 5 minutes until softened.
- Add minced garlic and thyme, cooking for 1-2 minutes until fragrant.
- Stir in tomato paste, balsamic vinegar, and maple syrup. Pour in the red wine and simmer for 2 minutes.
- Add beef broth and bring to a low simmer.
- Create a slurry by dissolving flour in water, and add to the pot to thicken the stew.
- Return seared beef to the pot with bay leaves and rosemary. Simmer over low heat for 1 hour.
- Stir in butternut squash, cover, and cook for another 30 minutes, or until squash is tender.
- Remove bay leaves and rosemary. Garnish with chopped parsley before serving.
Notes
For best flavor, use high-quality chuck roast and fresh herbs. This stew can be made ahead and tastes even better the next day.
