Description

A hearty Butternut Squash Beef Stew that combines tender beef with sweet butternut squash in a rich broth, perfect for a cozy family dinner.


Ingredients

  • 3 pounds boneless beef chuck roast, excess fat trimmed
  • 1 1/2 teaspoons Kosher salt
  • 1 teaspoon ground black pepper
  • Olive oil (extra virgin recommended)
  • 1 large red onion, chopped
  • 6 cloves fresh garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 2 tablespoons tomato paste
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 1 cup red wine or beef broth
  • 4 cups beef broth
  • 1/4 cup all-purpose flour
  • 3 bay leaves
  • 2 sprigs fresh rosemary (or 1 teaspoon dried)
  • 4 cups diced butternut squash, cut into 1-inch cubes
  • Chopped Italian parsley, for garnish

Instructions

  1. Cut the beef chuck into 1-inch cubes and pat them dry. Season with salt and pepper and drizzle with olive oil.
  2. Heat oil in a large Dutch oven over medium-high heat and sear the beef until browned, about 5-7 minutes per batch.
  3. Reduce heat to medium, add more oil, and sauté the onions for about 5 minutes until softened.
  4. Add minced garlic and thyme, cooking for 1-2 minutes until fragrant.
  5. Stir in tomato paste, balsamic vinegar, and maple syrup. Pour in the red wine and simmer for 2 minutes.
  6. Add beef broth and bring to a low simmer.
  7. Create a slurry by dissolving flour in water, and add to the pot to thicken the stew.
  8. Return seared beef to the pot with bay leaves and rosemary. Simmer over low heat for 1 hour.
  9. Stir in butternut squash, cover, and cook for another 30 minutes, or until squash is tender.
  10. Remove bay leaves and rosemary. Garnish with chopped parsley before serving.

Notes

For best flavor, use high-quality chuck roast and fresh herbs. This stew can be made ahead and tastes even better the next day.
