A decadent and healthy dessert made with chia seeds, chocolate, and salted caramel, perfect for a cozy afternoon treat.
Ingredients
Scale
- 1/4 cup chia seeds
- 3/4 cup milk or vegan milk
- 3 juicy dates
- 1/4 cup Greek yogurt
- 1/2 teaspoon vanilla bean paste or vanilla extract
- 1 tablespoon cacao powder
- 1 serving chocolate protein powder
- Generous pinch of salt
- For Toppings: Cacao nibs, Flaky sea salt
Instructions
- Add all ingredients to a blender. Blend on high for about 2 minutes until smooth, scraping down the sides as necessary.
- If the mousse is too runny, add more chia seeds or chill longer for thicker consistency.
- Pour the pudding into a glass jar or bowl and refrigerate for at least 1 hour or overnight to allow the chia seeds to expand.
- Serve chilled with your favorite toppings like cacao nibs and flaky sea salt.
Notes
Store in the fridge for up to 3 days. For a chocolatey boost, add melted dark chocolate while blending.
