Ingredients

- 1 ripe spotty banana
- 1/4 cup chia seeds
- 1/2 cup milk of choice (almond, coconut, or dairy)
- 1 scoop vanilla protein powder (optional)
- Pinch of cinnamon
- 1/4 cup Greek yogurt or thick vegan yogurt
- Optional toppings: cacao nibs, bee pollen, fresh fruit
Instructions
- Peel and slice the ripe banana.
- In a blender, add the sliced banana, chia seeds, milk, protein powder, cinnamon, and Greek yogurt.
- Blend on high until smooth, about 30 seconds to 1 minute.
- Transfer the mixture to a jar and refrigerate for at least 15 to 30 minutes.
- Before serving, stir the pudding and top with cacao nibs, fresh fruit, or bee pollen.
Notes
Use the ripest bananas for the best sweetness. Store leftovers in an airtight container in the fridge for up to 3 days.
