Ingredients

  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded vegan cheese
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a medium skillet over medium heat until a drop of water sizzles.
  2. Add diced onion and bell pepper; sauté until softened, about 4-5 minutes.
  3. Stir in corn, black beans, cumin, salt, and pepper; cook for another 2-3 minutes.
  4. Spread filling evenly on one half of each tortilla. Sprinkle with vegan cheese and fold over.
  5. Wipe skillet clean, heat over medium again, and cook each quesadilla for 2-3 minutes on each side until golden brown.
  6. Remove from skillet, slice into wedges, and serve hot with salsa or guacamole.
