Delicious Black Bean Flautas with crispy exteriors and hearty black bean filling, perfect for any occasion.
Ingredients

- 1 can low sodium black beans, rinsed
- 8–10 corn tortillas
- 1/2 white onion, diced
- 1 jalapeño pepper, diced
- 1/2 tsp cumin
- 2 tbsp canola oil (optional)
- 1/2 tsp chili powder (optional)
- 1/2 tsp garlic powder
- 1/2–3/4 cup vegetable broth or water
- Salt and pepper, to taste
- Guacamole, cilantro, Tapatio, and salsa for serving
Instructions
- Drain and rinse the black beans in a colander.
- Dice the onion and jalapeño, then sauté in a medium pan with vegetable broth for about 5 minutes until translucent.
- Add the black beans and remaining broth, cooking for another 5 minutes while mashing slightly.
- Warm the tortillas on a griddle for about 30 seconds on each side.
- Place a heaping tablespoon of the bean mixture in the center of each tortilla and roll tightly.
- Fry the flautas in hot oil for about 3-4 minutes per side or bake at 400°F for 10-12 minutes.
- Serve garnished with guacamole, salsa, chopped cilantro, and Tapatio.
Notes
For a healthier option, bake the flautas instead of frying. Ensure tortillas are warm to prevent breaking.
